Applejack Hospitality Launches RAFI URBNSURF In Sydney Olympic Park
On 24th July 2024 we celebrated the launch of RAFI’s second location in Sydney Olympic Park.
We hosted an exclusive gathering for 250 guests at RAFI URBNSURF, NSW’s groundbreaking wave park. Our new restaurant boasts stunning views of the rolling waves and park, with a menu that showcases the best of fresh, seasonal produce. We were delighted to share this momentous occasion with leading figures from the hospitality industry, the dedicated suppliers who helped bring our vision to life, media representatives, and our closest family and friends.
As guests arrived, they were welcomed with a coastal twist on RAFI’s beloved signature cocktail ‘Fragola Fizz II’ (made with Yuzu & Green Tea Spirit, sake, Aperol, salted strawberry leaf and fizz) developed by RAFI Bar Manager Cameron Freno. Flowing NV Prosecco was also on offer, with a selection of wines and beers available throughout the night.
A live seafood station sat front and centre, showcasing RAFI’s renowned dishes: South Coast Tuna with tomato, tahini, and chilli oil; Silver Trevally with green apple; and mussels escabeche with dried olives, pickled onions, and chilli. Roaming canapés created by RAFI Executive Chef Matias Cillòniz included crispy potatoes topped with cultured cream, salmon roe, and chives; Glacier 51 toothfish with koji and charred lemon salsa; sesame chicken pita pockets; and for a sweet finish, mini chocolate hazelnut tarts.
Applejack founders and co-directors Hamish Watts and Ben Carroll kicked off the evening with a welcome speech, expressing their excitement in unveiling the newest venture. As avid surfers themselves, they shared how this project holds particular significance for them. The duo took a moment to extend heartfelt thanks to key collaborators, including the URBNSURF team, design and architecture firm Luchetti Krelle, as well as the dedicated builders and suppliers. They also acknowledged the hard work of the Applejack team and expressed appreciation for the Sydney Olympic Park Association in bringing this vision to life.
With an incredible sunset, delicious food & drinks and Latin American tunes by DJ Foxy Fuzz setting the stage, it was the party of the year!
